It’s Thursday and time for another “In my Kitchen” post. I’m playing along with Beauty that Moves. Stop in over there for a whole lot more inspiration!

We’re getting into warmer weather here and our menus are starting to show not only the heat but also the busy-ness that comes with it. We’re eating quick meals and trying to pack in as many veggies and fruits as we can. I made my first tortilla in many years this week as well. It turned out just right (whew). There were some great tips here that helped a lot. We don’t have a non-stick pan, so the whole thing could have been a disaster. It wasn’t and we’ll be eating more in the future!

The watermelon-blueberry salad is a huge hit this year. It’s really just watermelon and blueberry with a secret ingredient: mint. That mint works some kind of alchemy with the watermelon and everything is just a touch sweeter. Peanut in particular loves this combination and eats it right up.

I’ve mentioned before that my family isn’t really big on salads. I’ve got a couple tricks up my sleeve for them. One is the no-lettuce salad. It’s diced red pepper, cucumber (no seeds), and tomato plus some feta. It gets just a touch of salt (depends on how salty the cheese is), fresh oregano, olive oil, and a squeeze of lemon to finish it off. This one is destined for a World Cup BBQ this evening.

The last picture is a Pyrex dish I picked up a thrift store in Appeldoorn yesterday. Something about those simple line drawings and nice bright colors makes me smile. Surely the salad will taste yummier, too!

    Oh my, these pictures are delicious…. I MEAN gorgeous! All of that summertime color! I love the idea of mint with the watermelon and blueberries. Your tomatoes and cucumber remind me of a salad that I make with both… I’ll have to look up that recipe. It’s delicious — though my kids call it STINKY SALAD because it has garlic and smells up the refrigerater – LOL. Believe me, it’s worth it! Happy Summertime!

    Just plain Yum…. I could eat this post up! I love blueberries and watermelon, and will have to try adding mint. One thing we make once a week at our house is pico de gallo. We use it on everything from rice, to scrambled eggs, to taco salad. 3-4 diced tomatoes (i like to use roma), one diced red onion, cut up one bunch of cilantro, one bunch of green onions, 2 bell peppers diced, one jalapeno pepper finely chopped, 1/8th tsp black pepper, 1/8th tsp salt, 1/2 tsp garlic powder. Mix, chill, enjoy!

      That sounds fantastic! There’s nothing like good tomatoes and we’re lucky that they are easy to get here. I’ll have to give your pico a try!

    I made my first tortilla after ages last week too. Yours looks delicious as does that amazing watermelon and blueberry salad. We have fresh mint in the garden. I must try this. Thanks for sharing.
